What to do with your jack-o-lantern on Nov 3. |
Black Bean, Pumpkin & Chicken Chili -leftover rotisserie chicken -one can chili beans -black beans -diced tomatoes -chopped onion -cubed cooked pumpkin -garlic -chili powder -cayenne powder -red pepper flakes -vegetable stock
Simmer all ingredients in stock pot.
Pumpkin, Sweet Potato & Leek Soup -cubed cooked pumpkin (1/2 medium pumpkin) -2 cubed sweet potatoes -2 chopped leeks -3 Tbsp. coconut oil -2 cloves garlic -chopped vidalia onion (1/2 onion) -one pint half & half -one quart vegetable stock -bay leaf -pinch each of sage, cinnamon, nutmeg and cloves -salt and pepper to taste
Saute pumpkin, sweet potato, leeks, onion and garlic in oil. Add half & half, vegetable stock and bay leaf. Bring to a boil. Simmer until all veggies are soft. Remove bay leaf and puree. Add in seasonings. Serve hot. |
